| My Tofu Scramble: made with Avocado and salsa on side |
The Recipe
- 1 Package of Extra Firm Tofu
- 1 Tablespoon Olive Oil (pretty much any oil will work)
- 1/2 Cup of Diced White Onion
- 1 Tablespoon of Minced Garlic
- 1/4 Teaspoon of Coriander
- 1/2 Teaspoon of Cumin
- 1/4 Teaspoon Garlic Powder
- 1 1/4 Teaspoons of Turmeric
- Salt and Pepper to taste
- Veggies: Add whatever you want! I didn't have much, but diced 1 Avocado and mixed it in. Other ideas are Peppers, Scallions, Corn, or Carrots .
The Directions
1. Place the block of Tofu on a plate and soak excess liquid with a paper towel
2. Once dried take a large fork and mash the block of Tofu to give it a crumbly consistency
3. In a pan, drizzle Olive Oil with the Onions, Garlic, and whatever Veggies you decide to include (if you want to include Avocado do not mix it in until the end). Cook over medium heat for a few minutes until veggies are soft.
4. Add Cumin, Coriander and Garlic Powder in and stir in with Veggies.
5. Next, add the Tofu with 2 Tablespoons of water to the pan. Mix around and then add Turmeric.
6. Stir contents together and let cook for about 2 minutes.
7. Your scramble is not ready to serve! If you want to add Avocado you can mix in before serving and I also enjoyed adding salsa.
Not only was this a filling dinner, but I also put the remaining scramble into a container to bring to work for lunch. This is a meal that you can pretty much eat at any point during the day. Enjoy!
